Sunflowers' purpose is to help people figure out what direction they're facing by always facing east. Although one can easily figure out the direction they're facing in the debug (F3) menu.

2) Iron Trapdoors/Fence Gates might be nice...
3) Lightning/Thunder improvement would be nice. Also, some way to force lightning to strike (a command or some sort of "lightning charge" that can be fired from a dispenser would be especially nice)
4) You can already do all that with redstone, so no, don't be lazy. Get a mod if you want MC to do it for you!!
5) Mojang has already comfirmed that craftable saddles and horse armor are not going to exist, ever, period. Go dungeon raiding if you want saddles and horse armor.
6) There's already an uncountable number of mods that'll do that for you, and they've already added dyed clay. Sure, it may be nice, but Mojang would be robbing a number of mod authors of their creations, and somehow I don't see them doing that.

I agree with the fact horse armor should be uncraftable, devs said it's some kind of award. But I think horse armor shouldn't be non-renewable.
In SSP it's okay. Entire world is yours. If you lose an horse armor, you can explore further and generate new structures (dungeons, pyramids...) to have a chance of finding new ones. That's what I did with my world I've been playing on since beta 1.7.3. But it's not totally okay in SMP servers with enforced world limits, the horse armors are numbered since the start.
Say, a small server with 2,000 x 2,000-block wide world (I played on one once), if it holds 10 or 15 players there'll be enough armors for everyone, but if it's open for a greater number of players, the new comers will have trouble to find horse armors since the first joiners might have looted all dungeons and pyramids of the server.
As solution, I'd propose that horse armors should be a rare trade with Blacksmiths and keep it uncraftable. You still need to explore the map and luckily find a village, and the village with a Blacksmith alive, you'll need to trade with him a lot of times until he offers you a horse armor and then put him safe from zombie hordes.
Hey in 1.7 can there be some pegasus horses? also the dragon egg can be hatched by right clicking and then you can get a pet dragon in vanilla minecraft! also add in different dog breeds and a ender cat (black cat with purple eyes) It will be hostle to pigmen and blazes :3
