I'm actually the same. I'm absolutely terrified of SSP. I honestly have no idea why. Like, I can only play on Peaceful, and even then I'm still scared. Maybe it's because I don't like being alone. Are you the same? It's weird. I can play on hard mode with my friends in SMP without a sweat, but SSP.. D: I wonder why?

Maybe you could make a world for her. A sort of tropical island get away? I don't know. You could have a little beach house over-looking the sea and sunset. Maybe have a huge sign in the sky saying "I love you" or something like that? I don't know. XD

If you want to edit the landscape, World Painter and MCEdit are really good tools to use. You could also use TooManyItems to spawn blocks, change the time of day and switch from creative to survival. Hope I helped.
