OP, I read your whole post. I was going to do a point by point rebuttal, but what's the point? Key things stick out. Mainly, you make it sound like you sprint everywhere, are too lazy to farm, and talk about how minecraft isn't realistic, but then use realism for a reason against potions.
All in all, I love to break it to you that the hunger bar is staying in. Potions are getting implemented. You can think of it as medicine if it makes you feel better.
If you can't handle the hunger bar/related changes, which I feel made the game easier, then play creative.
I disagree, redstone, with a couple hours is easy enough to understand.
however potions WILL be orders of magnitude easier yet. Of course, if one wants they can just avoid the wiki, I doubt I'll use it for potions at all.
Redstone is like anything else. With a little practice, most people can do what they want with it. There is no skill cap with redstone though. That is why some people are able to take on exceedingly complicated projects.
Potions, if implemented in the way that players are expecting, will have a skill cap. If you don't have to concern yourself with timing ingredients, timing overall cook time, etc potions will be very easy.
Potions are in because the food system isn't going away. The lazy will not get their checkbox.
Naturally not with bonemeal, like making them spread..
Mushrooms don't spread as well as they once did. In fact, they spread so slow now that you're better off only using mushrooms with bonemeal.
Mushroom soup is also the only food that doesn't stack. Realistically, you're looking at 4 items to carry 64 food, and that's assuming you're making it as you go using a crafting table you carry. Bread stacks up to 64 now, is more reliable to reproduce than chickens, and can be readily available in the first couple of days.
I have to agree with everyone else. In the video, all but 2 plants are mature in a 9x9 wheat field. The yield is more than enough to keep you going well past the next harvest.
my texturepack isn't really a higher resolution of the default, but more a 3D effect of the default.

Nice pack. You really did a good job on it. Overall though, its not for me. The noise in the textures make different kinds of stone stand out from eachother a lot.
I am unsure if it is confirmed or not, but is a fence really one of few things endermen cannot pick up? from what I have experienced a fence behaves like a block for the most part, but I do not know if this is a thing that can stop them

Ok, they do 1 more heart of damage... but both stone and iron take 3 hits to kill mobs.
IMO, you're better off using stone until you can make a diamond sword.
