What do they look like? Miniature models of passive mobs that sit upon your arm.
What do they shoot? Their drops! Sheep shoot mutton and/or wool, pigs shoot pork-chops, cows beef and/or leather, etc.
Can they be enchanted? Sure, why not. Mob guns with the Flame enchantment can shoot the cooked version of their drops: cooked beef, cooked pork-chops, etc.
Speed/accuracy of shot? I'd say not very accurate and not very fast either. It's a whimsical weapon.
Sounds? Oh, yes, sounds are a MUST. A cow moos when beef is shot from his rear-end.
Okay, sounds interesting, but how do you make a mob gun? I dunno! You can figure that out.
Can you pick up their fired drops? Maybe a config option for this. Option A: shoots unlimited ammo that you can pick up. Option B: shoots unlimited ammo that you cannot pick up. Option C: you must have the mob drops in your inventory in order to shoot them, in which case, you may pick up those drops. Option D: you decide.
How much damage do they do? If it has a "charge up" sequence, it'll do more damage. If it has Power IV on it, it'll do more damage. For base damage, I'd say not very high.

Why should you make it? You wanted the idea!
Good luck! Let me know if you have any questions.
