There could be a couple of reasons for villagers to disappear. The most simple explanation is that they die. Maybe you have thought of this and have protected the villagers from harm. If not, you will need to do some things to keep them safe especially at night.
If these villagers are protected from danger, then it could be that an old issue with Bedrock has returned. A couple of years ago Bedrock edition had a bug that allowed mobs to despawn. This issue was related to the mobs crossing chunk boundaries. Let's hope that problem has not come back.
Avalon is a vanilla server intended for builders and adventurers. It has been running continuously for 4 years and will be going for many years to come. So if you are interested in long term builds and long term friends, then maybe Avalon is a place that will interest you.
The global spawn was recently moved to give interested players a fresh start.

After re-reading my initial post there is something that I didn't make very clear, and I am sorry if this impacts anyone that has shown interest in the server. Our server really is intended for people 25 and up. In fact, the vast majority of us are in our 30s and 40s.

Yes, this server has been around for a bit. We are a community of adults playing Minecraft, socializing and making friends. Our is for people 25 and older, and our members range in age from mid-20s up into their 60s ... and we have every decade in between!
This is a survival world. It will never reset, so the builds continue to get more fun and elaborate. Every player has their own base, but there is also a centralized city with a shopping district, PvP arena and a recently opened mini-game area.
We are a very open and friendly community. If you are an adult and looking to share this great game with other's that have a passion for it, then feel free to reply here or send me a PM.
You do not need to be a hardcore Minecraft player, but we do have several on the server. :0) If you play a few days each week, that's fine! This is a long term server, take your time and enjoy the game with friends!
Okay, this doesn't fix your problem but it does give you a work around. For your first portal use each session, you may be able to throw any item/entity into the portal first: seeds, rotten flesh, etc.
Anything that would force the game to perform the portal routine.

Yes, this is a little known glitch in Bedrock. Siltentwisperer included it in one of his Bugrock videos. His description matches yours almost exactly!

I wonder if it matters what uses the portal for the first time in the session?
New suggestion ... locate a nitwit and throw him into the portal first!
