I didn't report last time but performing fast actions on many blocks like quickly havesting a row of wheat, slow the frame rate to a slideshow with "Multicore" mode on.
I'm not talking about the fps number because doing F3 and watching the fps doesn't show the problem.
A quick switch from "multicore" to "default" always fix this.
Thanks to your update, I no longer get increasing lag spikes when the game free-up memory.

But I see some other peoples have begun reporting on this issue so I hope it's easy to replicate.

Still not getting animated textures on handheld compass or clock when Antialiasing or Anisotropic filtering is enabled (no texture pack, vanilla minecraft)
Enabling Anistropic Filtering and/or Antialiasing with Chunck Loading set to "Multicore" cause the rendering to only render entities like chests and Npcs.
Enabling Anistropic Filtering cause parts of the clock to not render when the clock is hold in hand (purple missing texture). Probably the same with the compass because it's a bug related to animated textures.
Getting 125 fps with server "view-distance=15" instead of the default 10
I don't trust the automatic update process to overwrite the old files correctly, that's why I delete everything in the ".minecraft" folder (backup world saves) and reinstall from scratch.
Your poll is flawed. You can't just choose NO and skip the other panel it's not accepted by the poll engine so I bet many No voters gave up right there.
Not a big one but I just tested and dropping water on lava doesnt have the steam particles effect anymore. In version 1.2.5 you had this effect in single player but not in multiplayer. Now because of the code merge in 1.3 the effect is not there in single player and multiplayer too.
Chunks errors (x-ray vision or missing) and mountains defigured by lighting glitchs are on top of my list of annoying bugs but they say those bugs are very difficult to squash and need more time so it's fine with me having a hotfix later. I just hope I wont have to wait another 4 months to the next patch.

Optifine HD A2 seem to have a problem with garbage collection, I get a very noticable hiccup everytime the game is
freeing up some ram.
