I have seen this attempt many times, what I would recommend is that you do regular MC videos until you build up some viewers. Then you can start your RP Adventure. If you just go right into it, nobody is going to watch it.
Chicken is a much better food than wheat. Since you have created a way for it to be obtainable easily, wouldn't it make sense that Chicken Farming is good for food?

Are any of the mods conflicting?
Are the mods using the latest bug-free version?

Ive played Minecraft on WAY less than that.

2GB is for like hardcore gaming, like Crysis 2 on MAX settings.
But you'r on a Mac so you wont be doing much gaming, so I would recommend the 1GB.
Maybe it would be better if you told us what you were planning to do with the computer.
And Minecraft would run on highest settings, like with 80+ frames with the 1GB version.
