Actually, no you can't. With rednet cable you can turn off any of the cardinal directions individually and still leave a connection on another. With essentia tubes, you can merely turn off an entire section of tube. They behave a lot like itemducts do, with the exception that itemducts can be turned off at a connection point that is connected to an inventory. Also, itemducts can be partitioned by placing microblocks (covers) inbetween them so that they don't interact, unfortunately essentia tubes lack both of these "features"...
Either I'm misinterpreting what you're saying or you're thinking of how tubes used to work.
I keep getting a crash whenever I try and put an already chiseled block into the GUI to change the block type. Crash log below. Any help would be great.

Your using thaumcraft 4.1.1.14 which is for 1.7.2.
Update to thaumcraft 4.2.
Also you may want to update baubles I'm pretty sure you have the version that deletes your inventory on death.
