If there really is a need for an inventory-less hopper then this is probably the way to do it. Personally I have never had an issue with hopper storage and in fact some builds that rely on it. Since real world industrial hoppers are delivery systems with limited storage I would have hoppers keep this ability, and add a pipe block or something that just moves the item right on through, and otherwise acts the same.
Maybe another solution would be that the items simply bypass the hopper storage if there is any kind of storage like a cart or chest present.
While an inventory is crucial, I think that reducing it from 5 slots to 1 slot would be best, as well as being able to trigger it on and off. Looking at some of the sorting machines people have already made, there is absolutely no reason for there to be 320 pieces of rotten meat or iron ore sitting in your contraption to make sure it works properly. This is shaping up to be an impressive release, but some of the items require tweaking before they'll be fully ready.
How far away is the mob trap from where you are standing. If it is out of 32 block range then mobs will shut of their pathfinding and will not move. If the trap is too close to you (under 24 blocks) no mobs will spawn.
Personally I think that creations would be much simpler if the hopper did not have an inventory. Things like sorting items would require about a tenth as much work and zero complicated redstone you just have a hopper on top of a chest full of single item stacks of what you want sorted.
If you ever need the hopper to store items (like a buffer whilst waiting for a cart etc.) you can just have one hopper on top of a chest and then a hopper sucking out of the chest.

Once you get fortune 3 pick and an efficiency 4 pick it takes about 7 minutes to get about 20 diamonds so I have around 3 stacks and when i need more I can easily get some.
It really doesn't matter if you have friends that have consoles get what they have so you can play together. Otherwise get the ps3 if you don't want to pay for online.

Then just not have a chest in the crafting recipe. Or even better have two different kinds of hoppers one with an inventory and one without.
