In general, Optifine is highly disliked by the modding community because of the archaic way in which it modifies the game (modifying/replacing whole classes instead of injecting changes into specific methods, meaning other mods can't modify the class or if they do they end up changing the wrong code since Optifine's changes moved everything around).
Yeah I do understand that. Still, somebody will have to come up with a mod that unifies all those mods into one pack somehow. It's hard to maintain this since every mod has to be the right version or else nothing will work. Plus there's always a danger that one of the mods will just stop getting updates.
And not everything can be replaced. I'm still searching a mod for a custom skybox that works with the current skyboxes. Can't completely replace all those Optifine features yet.

So yeah, For optifine 1.20.1 you need Forge version 47.1.43
or NeoForge 47.1.56 version in order for it to work.

On Optifine page, check the release notes and search for which Forge version is compatible with and use that one only.

Not exactly the same. Performance is a lot better with Iris/Sodium for sure, but optifine also comes with a lot of additional features.
