I completely understand. It took me months to decide to leave my hole in the ground and start building something impressive, and months later, I still haven't finished construction. Not sure why you think that a floating castle needs to be in the desert, though. I always imagined it in a plains biome, or maybe a forest. Whatever floats your boat, though! Good luck with that hobbit hole, it sounds pretty cool. Are you planning to have a functioning round door, like in the movies?

Make a floating castle. Get a bunch of sheep and use white wool for a castle-on-a-cloud look, or make an inverted pyramid out of smoothstone about 10-20 blocks up. Top it off with some grass and a waterfall or two, then build a castle on it. You can make the waterfalls feed into a lake the approximate dimensions of your island to make it look as if you carved a chunk out of the landscape and levitated it into the air.

So the real challenge is not getting bored of swimming.

not when swimming but when you are on land

so leave them swimming in the water and find a new island they will telport to you when you are on the new area

{also how slow is your laptop? i might be able to help you out

Yeah, they won't even teleport to me when I'm on land if they're in a large body of water. It may be because the chunk unloads, but I'll admit that I haven't dome much rigorous testing.

My laptop is extremely slow. Like, still laggy with all settings on minimum slow. I'm getting a new one next month, though, so it seems like more trouble than it's worth to try fixing this one. It's made more annoying because, being a school-issued laptop, I can't download anything, so optifine isn't an option. I was only able to get mc by putting it on a flashdrive. (now that I think about it, there's no reason that shouldn't work for optifine, but I'm going to get less than a month of occasional use out it, and I chose my username for a reason.)

don't wait for them as they will teleport towards you when you find land

I've actually found that dogs don't teleport in while swimming. It might be a recent addition, or a byproduct of my incredibly slow laptop.

In my experience, the dogs don't despawn, but stop moving when the you get so far ahead that the chunk that they're on unloads. if you have the patience, you could swim alongside them so that you don't get as far ahead of them as you would in a boat. Also, the wiki says that mobs can travel through nether portals (though I haven't tried this myself), so if you have a portal network with protection from ghasts you can take them through the Nether.

Use the water world superflat preset to start a survival world. Turns out you can't swim through 90 layers of water to the surface without drowning. Completely viable if you change it to, say, 30 layers. On the subject of superflat presets, making a layer of leaves. The constant block updates and plethora of dropped saplings and apples crashed minecraft.

Exploring a cave on the other side of the map from my spawn, I found a lava pool, when a zombie appeared behind me and almost pushed me into it. After killing it, I was debating what to drom from my full inventory to trade for the iron ingot that it had dropped, when I noticed an arrow in the wall next to me. Two skeletons had snuck up behind me and taken me down to two hearts before I realized what was going on (I blame lag). Ran deeper into the cave and managed to take them both down when they came around that corner. Felt like a BAMF.
