I have uruk-hai warriors guarding the place but i find it kind of annoying to see fighting all over the place while i'm trying to tend to my farm. they dont go inside my castle but they do just spawn in the walled off courtyard, so i'm wondering if there is a block i can put down instead of grass that mobs wont spawn on?
Maybe try some sort of stone block. I haven't had Rohirrim, or other good mobs besides dwarves, spawn underground even in well-lit areas. Not sure if it's because of the stone though, it could be that multiple spawn parameters aren't being met.

you have to offer something to the player who comes, i dont mean in the form of items but in the form of offering them a reason to stay. A world that they feel involved in.
I am one of those players you speak of, i log into a server take a look around and then usually leave never to come back. i often come to a server and play for a bit and this feeling of ''i already have all this in my single player game/other server i play on'' so i dont feel like starting all over. Most servers are all the same. A pretty spawn points with the rules and then all the surronding world is free to build in or alreayd poupulated by ugly/unfinished buildings.
if you want people to stay in your server you need to offer the player a unique experience that they will find nowhere else right from the start. first impressions is everything in a game server.

The only thing i can think of that would be fast is using the worm queen from the twilight forest mod. it's kind of a gun that shoots glowing worms. so you just point and shoot. it'.s pretty fast and efficient but i it wouldnt fit in all kind of builds.
