New plants and ores. In particular, nether wood and any nether ore. The zombie, zombie pigmen and ghast drops also need to be replaced. Notch is so slow at implementing things... modders can do this stuff in one week, and notch's entire team can't do it in months! ugh.
I actually find it really annoying. It impairs your sight and makes doing anything near impossible. I think it was an update that was needed, though. Minecraft wouldn't be minecraft without weather. I just wish the raindrops weren't bright blue. I wish they were at least semi transparent.
I'm on single player. The ground of my house is currently made of grass, so animals spawn there often. I just came back from a mining trip and as always, the place was full of mobs. But there was tons of wool on the floor, as if somebody killed some sheep while I wasn't there. I have no high drops in my house, so the sheep couldn't have died that way: the only way to get to the second floor is to climb a ladder that goes trough a 1 block hole, which sheep can't fit trough. There's no fire or lava in my house. I have no wolves yet. So how do you explain this? How did the sheep die?

-Paper you can write on and books you can write in would be nice. If we could draw on paper, that would be even better-- we could make building plans and trade them! I'm not sure how much work this would be, though.

-colored glass and lights. This might also be hard to implement, but having multicolored lightstone would be great to make buildings with neon lights and tainted glass would be useful for churches.

-Christmas trees, or some sort of shiny decorations we could put on trees (and maybe even cacti) for christmas.

-A techno music CD so we could have real raves. The CDs we have right now aren't really dance music..

Pick axe, so you can mine obsidian and make a portal to the nether. Once you have access to the nether, you can collect super duper cool nether stuffs.

Well, deadmau5 visited a server I frequent, so I know that people who work on the game do visit random servers. He had his special skin and everything. I told him his ears were sexy.
My opinion is that important buildings should be protected somehow: maybe you could buy a plot of land (using an economy system) and the admins would make it so that only you can edit it. If something isn't protected, it can legally be griefed and it's the owner's fault if their stuff gets destroyed.
I think it's hard to keep a nice world when griefing is too easy, but stealing and destroying is fun and shouldn't be completely banned. Killing players should only be allowed in certain areas, such as towns that allow PVP or arenas.
It's called creative mode. It hasn't been updated in forever, but you can't take damage.
