To be honest, i don't quite know how to put my answer into words. But if enough time goes by without Mojang taking notice of us (I want to give it atleast a year), i will probably end up asking somebody to turn this into a mod. I've still got a few things planned in the mean time, though =D
As an advocate for powered flight, I normally disdain from flight being obtainable from tame-able mobs. However, you do bring up some strong points, so this idea has merit. I've noticed that most flight from a mob suggestions bring up the same arguments for it's inclusion. Here are my rebuttals:
It is found in the Extreme Hills Biome, making for a treacherous climb!
Extreme Hills are actually stupidly easy to climb. In fact, since you are so high up anyway, you could easily spot them.
You must feed it everyday with X and Y food to make it grow up
None of the other animals do this. Why should this animal be an exception?
Food is plentiful and renewable for experienced players, so this is a non-issue for them.
Flight is quite restricted
There is a fine line when balancing that. Too restrictive, and flight will become useless. Too lenient, and it could become overpowered.
As a side note - the method at which you control the Gryphon is inside that line, so I approve.
YOU MUST BOSS DEFEAT
What if somebody wanted to build a mountainside headquarters? Take note - your suggestion does not have a boss to defeat, so this does not apply to you.
So, my main beef with the suggestion is that the Gryphon is too easy to acquire, seeing a mineable block found out in the open. If it hataches on it's own, a new player could end up finding one and having an advantage over an experienced player. However, controlling the Gryphon is well balanced, so I....
partly suppourt. Perhaps a more difficult method of hatching the egg (a ritual with Redstone?) would better balance the Gryphon. I'm on the fence.

I hear what you're saying with your rebuttals, but i have to say something about having to feed your baby Gryphon...
You said that no other animals do this, but when i was playing around with horses in the snapshot, i was feeding baby horses hay and it was making them grow. Now to be fair, that didn't exist when i suggested Gryphons. So it would have actually been an exception, like you said.
Also, the eggs wouldn't hatch on your own. You'd have to incubate them for a couple of in-game days. I was thinking the player would probably place their Gryphon egg on either a dirt or a hay block, and then place a torch directly above it. Or maybe some type of redstone ritual like you said. The player should definitely have to do something to manually hatch it.

Yay! a place where people want to add in Gryphons to minecraft!
I've been floating the suggestion to add gryphons for a long time in the "Mob adding" mods like 'Mo Creatures, but everyone seems to enjoy dragons or dragonesque creatures better.
Heh yeah i've noticed a lot of people really want to see dragons in Minecraft. I love dragons *takes brief glance at his Skyrim map hanging above his computer*, but personally, i don't think they would ever fit into Minecraft as mounts or tamable mobs.
I honestly think they should spawn in a rare occasion in extreme hills on the top on a hill, then, you could have a model of sticks and wheat, it would be cool, and also, a mother and a father of the gryphon egg(s) could be watching their eggs and try to attack you. thanks!
I have a suggestion: 1. Death Animation: When a Gryphon diesit will tilt sideways and crash down. 1a. this makes Gryphons are risky choice of mount, basically: Gryphon's life = Your life 2a. however maybe we could suggest parachutes as well (made from feathers maybe?)
2. Beak Dash The rider can press a special button which will cause the Gryphon to "dash" forward, any entities struck by the beak will be knocked sideways (if hit from the side) or backwards (etc.) damage will be based radius of impact area, health of the Gryphon, etc.. 1a. however this will directly affect the Gryphons hunger and consume a large amount of used (to balance it, up for debate) 2a. this could be used for quick escapes, hit and run tactics, etc.

Ohhh don't worry. If this doesn't end up in vanilla, we've received many offers for people to mod this for us. Or at the very least, suggest it to someone who might. But i'm pretty hopeful about it's chances in vanilla!
Should gryphons be afraid of water? A large body of water i mean.
Hm... I wouldn't think so, due to them being part eagle. I think that maybe you should get dismounted if you fly your Gryphon into water though. It shouldn't let you swim them around.
I think you might need help with your banner. Save the image by right-clicking the banner and saving it to your computer. Go to Imgur and upload it there, take the embed code, and then copy it into your signature to fix it.

I remember seeing a quote from one of them saying something along the lines of how after receiving thousands (he may have been exaggerating) they couldn't help but notice it. Colored glass has been around longer, and understandably has more supporters than us. I was thinking that to compensate for numbers, we would use timing and coordination.
And yeah, if we do end up doing this, we should all say the same thing, like you suggested.
I wonder what would happen if we (a group of supporters, bannerlords and myself) did a synchronized tweet at dinnerbone or jeb. Maybe if a bunch of us tweeted at the same time, it might catch their attention.
We could set a date, giving supporters time to become aware of our plan, and then all tweet within a time frame (perhaps like, 8:00 PM to 9:00 PM) on that given day.
Aye. Maybe a secret room with a simple AND gate for a combination lock. And possibly have the chances of it spawning, say, one in five hundred? As only three Strongholds spawn per world, that would make it rare to the point of finding one would be a hugely epic accomplishment, and give players a reason to search out the the other Strongholds.
Or, every Stronghold could have a hidden alter room, but, in 499/500 cases, a broken egg would be sitting on top, which would be no more than a useless decorative block.
And, perhaps, the alter room could have one or two silverfish spawners guarding it, like the one guarding the End portal?

You seem to have forgotten that Mojang has a habit of putting popular mods, or part of popular mods, into vanilla MC. And besides, giving them a fully workable model of why your idea is so great is never a bad idea. And besides that, having a mod would spear the word about this idea even more, and allow Mojang to see if it is really popular or not.

Would it be interesting if, extremely rarely, if an alter that spawned in a Stronghold or a new generated structure, could have a gryphon egg on it? Sort of a shrine where ancient cultures worshiped gryphon as gods?

I'm sure you would do an excellent job, but we've had many people offer to mod it, or suggest it to Dr. Zhark for Mo' Creatures, and we've said no to all of them as well. So it is nothing personal. We just really want Mojang to add this to vanilla MC, and it being a mod might reduce the chances of that happening.
So, I like this idea. If they added these, I wouldn't even bother trying to find one, I'd spawn it in plain and simple. But the griffin texture should be changed. Right now it looks like a bird. Also, you're stealing a griffin egg from it's nest, so maybe the MOTHER griffin could defend her baby. I like your flying idea a lot. +1 just for that little bit. Maybe you should have to keep the egg warm? Even if this isn't implemented into vanilla, I'd love to see this as a mod.
Thanks for your support. May i ask what you mean about the texture? Gryphons are half eagle and half lion, moreso eagle than lion, due to the head, the wings and the ability to fly. So it was fully intended to look bird-like, but with the lower torso, back legs and tail of a lion.
But still, it is only concept art. Mojang would have to make their own model and texture when they add this to MC.
