The problem is, build height limit exists for memory purposes. 256 is an easy number for computers to remember, and it allows a range of 0 to 255 for building things. To my knowledge, unless the chunk system had another major overhaul (like when it doubled from 128 to 256), the game wouldn't be capable of handling a sporadic height increase of something like 356. You'd have to double it again.
They can introduce cubic chunks. This would also have the added benefit of making the sky islands not visible until you get close to them.
I think Sky Islands would be good but only if done correctly. I personally think that the Overworld should be separated into different "stages" as shown below. These are all at different heights.
1. Void.
2. Bedrock.
3. Extremely far underground. Abundance of lava-like biomes and hot caves, abyssal ocean level.
4. Caves rich in animal and plant life, open ocean and deep oceans.
5. Normal caves and other cave biomes, fairly deepish waters as well as underwater biomes like reefs, biomes that dip below sea level.
6. Surface type caves. Shallow water like rivers.
7. Sea Level.
8. Surface biomes.
9. Highland biomes.
10. Low height mountains.
11. High height mountains, some floating islands.
12. Floating islands made to represent surface biomes.
13. Floating islands with fantasy biomes that get very large.
Also, since we are talking about a tree update here, I'll start by talking about some tree ideas. The first is to turn the swamp trees into an entirely new type of tree, called "Swamp Oak". The logs can remain the same but the leaves should definitely change that way we can actually plant those trees.
Everything that slithers, blobs, and sticks itself through the many parts of the sea fall into the category of sea Critters. Sea Critters include creatures like sea slugs, snails, starfish and many others. A vast majority of these creatures are block-like in nature but still require a bucket to catch. They go dormant out of water but make excellent additions to aquariums and decorations around the house. Some can move slowly across the sea floor and others can swim slowly. Some can be used to make a decent amount of dyes. Many of them are also bioluminescent.
This is a rough list of the Sea Critters. Each of these would have lots of different skins/variants:
this is just because of fear of change, in the beginning it don't really feel right but It's really really fun to play in the new biomes oncew you get the grip of it, even if I would love to see more nether waste-like biomes or variants in the future...
forest and valleys edge like overworld biomes would be really nice too, as now the transition from a biomes to another can feel overwhelming especially because of the color and theme transition
I'm fine with the valleys. It's just that the forests need to be rarer. Or, one way to get around this without making them rarer would be to just introduce way more biomes (there still isn't much) and make way more biomes without vegetation.

We got something like that with multiple smelter types and with stonecutters allowing to produce stairs 50% more efficiently.
I think that anvil being necessary for plate armour production would also be that, but in different form - rather than bigger quantity, it would allow you to build high-quality armour, opposed to inexpensive chainmail from the crafting table.
But, of course, anvil needs a lot of iron to be built and slowly gets used up.
I'm not just talking about certain crafting stations being more efficient at certain recipes, I'm talking about recipes specific to certain crafting stations.
The concept isn't bad, and I'm not too concerned about using these for griefing considering if you can get this you can get Lava buckets or a Flint and Steel. Although if it does become a strong point of contention, maybe the fire could be special in that it doesn't spread, so the worst it can do is burn any flammable blocks it lands on.
The part about turning them into sweet berries I dislike. It doesn't seem to add anything, it doesn't really make sense, and just seems unnecessary.
The point of the potions would be for a ranged fire attack. TNT and Flint and Steel require you to be up against what you want burned/exploded. The Sweet Berries feature I suggested as a way to make Sweet Berries in the Nether.

You are currently able to plant both of the Nether trees on Grass. You are unable to plant them on Mycelium. The OP is suggesting that we should be able to plant them on Mycelium.
Alpine Forests would be a new biome type in Minecraft, and they can be found on top of mountains. Now that mountains are being updated I think that new mountain biomes would be a great addition. The Alpine Forest has a ground of Grass, despite being found at such high altitudes. Sometimes it snows, other times it rains. The trees here consist of a mixture of Spruce, Oak, and Birch. Sweet Berry Bushes can be found on the ground along with occasional Pumpkins. The mobs here consist of Pigs, Cows, Sheep, Chickens, Rabbits (come in a white variant), and Foxes. You may also come across a taiga village from time to time.

Those are Balloon Oak Trees. They are uncommon but I see them all the time.

Realistically I don't think Villagers would care whether they have too much things on sale throughout the Village or not.

You can't light things on fire with that, only entities. And it doesn't work in the rain.

Well that is true, Swamps have potential to be one of the most atmospheric areas in Minecraft.
