Server Override means that your client will ignore any settings it has saved. This means it strictly uses settings from the server.
Server Override has nothing to do with player skins.
In order to find out why you cannot see your own http://mojang.net/profile skin, I need some information.
If you cannot see your skin, please do the following:
1. Make sure you can see your skin on VANILLA (no forge & no mods & no resource packs)
2. Verify that you can also see your skin with all the resource packs and mods that you have installed - except gender
3. Either:
- Send me a screenshot of the Information GUI (Press the "G" key then click on the book button)
OR
- Send me the version of Minecraft, Forge and Gender you are using
Sending me this information will help me identify potential causes or complications with other mods.

Whew! This one took awhile. I have been very busy recently - everything happened!
This update is long awaited and fixes a few painful issues. I'll try to check replies on this thread when I can. Sometimes when I check, I don't have time to login. So if you find something wrong, please post here on this thread so I will see it even if I'm not logged in! No, in this case, Player Setting Code is a rewrite of the code that manages the settings for each username.
I've been trying to figure out why some people have problems with skins in 1.8
Does it happen with specific skins or just all the time?

In Gender 1.1.0, the default male textures have been switched back to Minecraft's original locations. Because of this, with Gender 1.1.0, you should see the random textures again.

This is an issue with the current way model effects are being applied in Gender's code.
I'm currently working on the next version of Gender; Which has a new way of applying the model effects and eliminates this weirdness.

Please install Gender version 1.1.0 for Minecraft 1.8
If it crashes in the same way when using 1.1.0, please provide me with a crash report so I can take a look.

My current goal is to fix the armor rendering bugs. There may be a new way to apply Gender's models. Hopefully this new part of the Mojang code works the way I need it to.

Yes, I had moved the zombie texture to /assets/gender because it looked weird to me. It was a strange sight to see a custom textured male zombie standing next to a female one.
No, I don't think you would break anything... Accoridng to the Minecraft Wiki, (which now appears to officially be provided by gamepedia), you just need the same folder structure in your resource pack.
Texture locations right now:
assets/gender/texture/zombiefemale.png
assets/gender/texture/zombiemale.png
I'm thinking of changing this in the next version of gender

Debug prints a lot of things to the console.
It's only really useful for me so I can see if things are being called properly when help is needed.

What version of Forge are you using?
What version of Gender are you using?
If you are using Gender 1.0.3 or later, please press 'G' (default
key) to open the Gender menu. Then click on the book icon on the bottom
right of the screen. This will bring you to a screen that has
information helpful for troubleshooting.
When sending me a message, you may also want to list the mods you have installed as one of them could be causing the problem.
