You know those tiny pools of water you see all the time everywhere in your worlds? Well, you can go to the bottom, or if there is an overhang of land, dig under that down until you have enough space you can use.

ive had a couple of bases hidden using redstone ore in the wall and a bud switch that activates if some1 punches the ore(because redstone ore lights up)
only real issue is if somebody mines the ore, but I usually have all my chests in hidden bases hidden in stone blocks in the wall using that minecart piston thing
I think you can get cobble by making creepers blow up stone. you can get sticks from witches to get initial tools. you could trade with villagers to make new tools or make a witch farm. crafting tables can be gotten from villages. it would be difficult, but not impossible.
I tried to escape mobs by making an underwater house... with a 3x3 floor inside and with walls that when all the way to the top of the ocean, so it was like a underwater glass tower. and it was only 12 blocks from land, so pointless. I then tried to make a skytrap, but thought instead of making it in the sky, I could make it 4 blocks above the ground and make a big pit, while making it, I was stupid enough to FILL IN all the air blocks inside with cobble....
I then tried to make a nether portal with a 1x2 opening and was surprised when it didn't light... that and I thought the best way to escape skeletons was to run into the ocean
build a coal farm that actually gives me enough coal to use for all my smelting, and route it into a series of furnaces so I don't need to farm trees anymore for charcoal
i would say mutton of you have it around. if you spawn near a roofed forest or mushroom island, then mushroom stew. i like chicken best myself tho, as it is easy to get seeds to start them, soon you can just use eggs, and when you get a little bit of redstone and iron you can automate it and never worry about food again
for some reason i have an obsession with naming my mc pet, tools, and everything else "cobalt-60", dont ask why, idk myself. i think one of my dragons is also named that, cant remember
my first pet to carry that name was I cave spider I trapped in a very large glass jar
i dont usually even make shelters if im exploring at night, I just keep my sword in slot 1 and keep moving, stopping less, and go around any mobs en route.
if im going to stay in an area to map it out better, I tend to put down a furnace, crafting table, and maybe chest and bed next to a tree or cliff or similar place that, while not mob proof,, at least has fewer mobs. I usually only make bases or shelters if I plan to live in an area.
forget underground, I make glass dome houses in deep ocean biomes a lot, why I no find villages in such biomes too? some1 has to have made the ocean temples!

travel to find a nice spot to live in, and raid villages and temples. that and make a couple wooden swords to survive the night with

after these i put the items in a specific slot, if i dont have something above i just have a gap in my hotbar
slot 6: misc1, usually blocks or torches
slot 7: misc2, for other tools like hoes and flint and steel
slot 8:bucket, empty, water, or lava
slot 9: food
i use number keys because it is difficult to use scroll wheel on a laptop

I usually horde things in giant, unsorted arrays of chests, not as big blocks in the world tho
