The moss is a nice touch and you have a good grasp on texturing, but you could probably make the moss' edges less blurry and more distinct with shadows showing that they're overlaying the stone. This model also only looks to be around 2 blocks tall -- making it larger would help emphasize that it is a potentially dangerous creature.
Rendering is always done client-side. You will not find a server-side mod that changes rendering. Sodium and Embeddium, that @woodythewizard mentioned, are client-side mods.
Edit : Your best bet would be core shaders, which load as resource packs and not mods. You may be able to have those as server resource packs and force people to use them; the closest thing to what you're looking for might be something like this - https://www.curseforge.com/minecraft/texture-packs/fog-shaders.

One of my favorite modpacks is https://www.curseforge.com/minecraft/modpacks/raspberry-flavoured ! It's progression-based while aiming to keep a Vanilla feel to the game.

If you're looking to fit Minecraft's style, I would suggest reducing the amount of cubes used in the model. Jappa went over vertex balance in one of his old Twitter posts, and someone has collected a lot of the game's design rules and concepts on this Reddit thread. https://www.reddit.com/r/minecraftsuggestions/comments/zx2cw1/the_design_principles_of_mojang_we_know_about/?utm_source=share&utm_medium=web3x&utm_name=web3xcss&utm_term=1&utm_content=share_button

Here is also a guide on how to add resource pack prompts to servers. https://nodecraft.com/support/games/minecraft/adding-a-resource-pack-to-a-minecraft-server
