I do see the appeal though, like in realistic space simulator games.
Well i suppose with the higher degree of controll, the PvPers will like it a lot, s well as a better feel of your surroundings.

Well I am certain that it's a bug not a feature. Stabilised rift signature is supposed to work the same way as a normal Rift signature, it's just a way to save enderpearls as you get 2 stabilised fabrics with 4 fabrics of reality and one enderpearl.
PS: At least it used to work like that, but it's certanly not suposed to link to the previous rift (requesting explanation of how it's suposed to work from the creators)
Are you placing rifts in creative? Because the signatures don't get used up correctly because of the way creative works (you can place one block multiple times). The first time you use a rift signature it enchants (it even glows) itself with location data and the second time it dissappears and creates a rift to the previous location (at least it's supposed to).

Just because you can cheat, doesn't mean you should.
Personally I agree that there are too many mods that introduce god-tier weapons (and invincible armour which is even worse) without making the game any harder. Some argue that it makes it easier to make huge structures and teraform stuff, but if you like building you can just switch to creative mode, that's what it's for.
On the other hand there are some preatty cool mods (unfortunately a minority) that expand on the game in a diferent direction instead of just introducing "like diamonds except stronger".
Some of my favorites are:
MAtmos - Generates music based on your suroundings, really enjoyable without affecting gameplay
Presence footsteps - A mod that makes footstep-sounds diferrent depending what you walk on (even diferent sides of a piston or a block under railway tracks)
Damage indicators - It's really nice to know how much health something has (besides bosses) and how much you deal
Animated player - it's kinda useless if you play in 1st person, but the your characters and other players if in multiplayer move much more fluently
Buildcraft - quaries and macerators are OP but personaly I just use it for the pipes (or you can just make a system out of hoppers, but pipes just look cooler with items flowing around)
Dimensional doors - one of my favorite mods, it creates empty rooms inside doors, doors that link 2 places, dungeons in other dimensions and it's recepies are not too easy (exept some dungeons have too much loot, it's a WIP)
Dynamic lights - It makes torches/glowstone/etc in your hand or in item form on the floor and burning mobs emit light (but I can't get it to work for some reason
Thaumcraft 3 and Thaumic thinkerer - The first one is a really fun mod to play with an the other one it's expansion pack, they are a really big mod that adds LOTS of new magic-related stuff to minecraft, but if you don't use it it won't affect your gameplay (outside of an occasional angry zombie) if you are willing to spend lots of time and resources on it it can give you slightly stonger tools and magic weapons, slightly better furnaces but using them too much can spawn some monsters nearby and over time deplete magic around you forcing you to move your base
Stalker creepers - a really simple mod that changes creeper behaviour, instead of blowing up when they get near you, they try to follow you and hide behind your back, but blow up if you turn around. It can make your explorations a bit more interesting, because you risk bringing a creeper into your house if you don't check behind you often. On the other hand if you play in 3rd person you can usually see them comming (it's just as freaky though).

If you make your own pocket dimension it should be totaly safe, it's the dungeons you have to watch out for.
Besides if you somehow die you go to limbo and if you manage to get out of limbo you don't even loose your stuff (you reappear somewhere in the overworld, better keep track of your coordinates).
To get out of limbo you have to find the bottom of the world (don't worry there is no fall damage in limbo) and find a sea of black liquid. If you touch it you will reappear in a random location in the overworld wit all your stuff. Also avoid monolyths, if they stare at you for a few seconds you will be teleported back to where you started (not dangerous but hella anoying).

Link signatures are suposed to link TWO places together with a rift (not many to one)
A door can't be a hub, but you can make a room full of doors each one linking to a different place (i personally like to make a coridor full of doors in a pocket dimension, like the one in the matrix)
You need one rift signature (or a stabilised one, it's the same thing) to create each rift (right click once on both locations, the signature is consumed in the process), and than you put any dimensional door on one of the rifts (wooden ones are cheaper), when you first travel trough it a linked door will appear at the exit-rift (it means you only need one door for each pair of rifts).
PS: Make sure you are not in creative mode when placing rifts, because it doesn't consume the rift signature and can get weird.

Rift growth is only caused by bare rifts, if they are contained inside doors they will not spread
