7950 is really only needed if you want to max out BF3, and even then it can't do it. The 7870 is perfect for you, all you need to do is turn down the AA and your able to run any games at high settings!
Well, I never said I don't play BF3. Eventhough I'm not, I will probably be playing games like that (as in graphics) in the future..

The 7870 should be fine, but like I said before it's up to you. The 7950 offers around 10% higher fps, but it's $50 more expensive. Both cards are worth it, but it's up to you. The 7870 is a very capable card.
Also, you could get 16 gb if you want, but I guarantee you won't use up 8 gb for gaming. You could always upgrade when you need more, instead of buying it now. Besides, the $35 extra could be spent on a CPU cooler if you ever decide to overclock, and that will definitely bring your performance up.

You don't like some features which have been removed, you don't like some features which have been added. You don't like the developers implementing suggestions from the community (WTF is wrong with that? Normally you should be very happy if the developers of a game do that).
You're saying all ores have become worthless, which is rediculous. You still have to mine to get ores. It's not like you can go out, kill 1000 zombies in 5 minutes, and get 10k iron. You still have to mine. Also, I don't see whats wrong with Notch adding more stuff so you're ABLE TO create an RPG experience. If you wan't to play minecraft like you used to, you can. It's still the same game.
But if you want to play/make an adventure map, which lots of people like, there is now more stuff to make those with! Notch added a 'goal' in minecraft, defeating the enderdragon. Minecraft really needed something like that. A game with no objectives at all is a boring game. Atleast, if you're playing survival. Once you've got everything it'll soon become boring. Thats where the decoration comes in. You've defeated the enderdragon, got all stuff possible, no objectives left, so you're going to build nice stuff.
But ah, there are so little decorative blocks! Look whats added in the new update.

Mouse and keyboard shouldn't be expensive (just cheap stuff, dont need some 70$ gaming keyboard and mouse).

Well, I've got 6GB atm, and I sometimes have big laggs, or framerate issues with some games. And when I'm running steam + skype + internet (+youtube) + minecraft + a minecraft tekkit server and maybe even more, 6 GB just isnt enough.

I might start working on this again. But I'd just redo the whole thing. Updating from beta 1.8.1 to release 1.6.4 is frankly impossible
