Squids dont spawn, they're crafted at the crafting table. You need 9 lapiz, one in each crafting square. You should get a small squid block in your inventory, right-click it in water to make a squid.
we can see grass of any block that is hit by sunlight. the grass cover all the sides of the block. If you are at the other side, even if there's no light, there will be this texture.
