As far as the breeding goes, I think that one of two things needs to be changed: No golden apples required or better chance at better horses.
Right now, getting the gold and everything to breed horses is difficult. To make this worse, however, once you breed them you end up with a horse that is more average. As Rioxas stated, the formula is
(Horse 1 + Horse 2 + Imaginary horse with random stats) / 3
except the random stats are weighted towards the center (more likely to be average than very good or very bad). This means that if you have 2 horses with great stats and you breed them, the newborn is almost guaranteed to have worse stats than the parents. If we need to use golden apples to breed, I think breeding should result in a better horse at least 1/5th - 1/10th of the time. If we don't need golden apples, however, I can't really complain about getting a bad horse from a regular apple.
I like the design, but I also agree with 123nart that you should try to use slabs and stairs to smooth it out more. Other than that, my only issue with it is that I like to use all the same type of wood on my structures, but that's just my personal preference. A nice texture pack could really make that look great as well (along with everything else in your world). I have LB Photo Realism (x64) and everything looks amazing. Using the (x256) makes everything look even better but most computers can't handle that smoothly.
