Minecraft is a sandbox game. Even that isn't the ultimate goal of it, which changes like this certainly hint towards, the fact that Notch also saw fit to include a creative mode shows that he at the very least partially understands that this game's greatest strength is in the player being able to play it how they want to. The forcing of a feature such as this onto the player is, personally, rather harsh, and not really that wise from a gameplay perspective.
This person is not asking for the removal of this feature, he is merely asking for the ability to toggle it. If you cannot see the logic in that idea, you have no hope. Continuing on.
Other (legitimate) points raised:

- Exactly! However, if it is not pointed out now that something needs changing, will it ever get changed? Maybe, but speaking out is a much more straightforward way to get an idea noticed.
Give yourself time to adapt/get used to it.
- Well, yes, it is certainly possible to adapt to it. But that counteracts the whole point of letting people play how they want to.
Not having hunger would be cheating!
- No. Some people considered Too Many Items cheating, but in 1.8, Notch turned it into a fully game supported mode (creative mode). And on top of that, how would having the game be slightly easier be cheating, when we already have toggles that turn mobs off altogether?
It makes the game easier, stop complaining.
- This is completely subjective, and as I haven't actually experimented horribly much with the hunger bar, can't really speak too much on... But either way, I don't see it should be much of an issue in the long run. It still raises other issues.
Just play on peaceful, you don't lose hunger.
- Right, and now there's no mobs either. Although there's no direct definition of 'cheating' for a sandbox game such as this, if a player self-imposes rules to play by, that could be considered cheating by their own standards. If they then have to break their own rules in order to fix something they never wanted anything to do with? That is just straight bad gameplay.
On top of all this, it does make a number of more challenging gameplay elements much much harder. Although people usually play these modes for a bit more of a challenge, the hunger bar drastically compounds the issue.
Nether Survival (Bring some saplings and dirt into the Nether, go. Now, you also have to actively hunt pigmen in order to survive. Although some people may like that primal aspect, some people may just want to do it to see how long they can stay alive, and food is just an unnecessary complication.)
Underground Survival (Bring saplings down to the lowest level and survive down there. Now, you have to survive off A - zombie flesh, which I last heard poisons you, so no go there, or B - taking the time to get grass down to the bottom level so you can spawn some animals. Again, still doable, but much more complicated now.)
Long story short... The inclusion of a toggle for the hunger bar has pretty much only positive consequences, and the few possible negative ones mostly deal with annoying the odd self-obsessed hardcore few.

Actually, I'm going to agree with this.
Although for the time being I put creative, cause... Well, it's what I'm probably gonna use most often. But for multiplayer and exploring once in a while...

Notch should make it so that when you start up a map you create all the presets for it as in difficulty, hunger, leveling, etc. then after you choose all of that, it can't be changed mid-game.
I came into this thread to say pretty much exactly this, however as you pretty much already said everything there is to say, there you go.
(I actually expect this to be the way it goes, as it has been stated NPC villages will be optional, and I don't really see us being able to turn them on and off after a map has been created.)
