1: make each single orb worth a lot more, so every mob killed only drops 1 or 2, which would reduce the amount dropped on player death dramatically, but what if someone doesn't die for a long time? That brings me to suggestion 2.
2: Every time a mob or the player is killed, they drop ONE orb. This orb has different colours for higher values. (reddish for a small amount, 3 or 4 normal orbs, and they slowly turn greener as you collect more, so if you die with a TON of experience, you drop 1 green orb plus your items, instead of lagging the server.)

Villager: Walks around until the other workers get enough stuff and put it in the chest so he can build his house then he will pick a profession.
Town Leader: Makes sure everyone is doing their job and is the one to trade with the villager.
Professions-
Farmer: Farms wheat and melon seeds and reeds. Requires a hoe and water.
Miner: Mines cobblestone, iron, diamond, gold, etc. Requires a pickaxe.
Lumberjack: Cuts down trees for wood. Requires a axe.
Blacksmith: Smelts cobble into smoothstone and iron into ingots, etc. Requires coal and the materials. Also will make the weapons, tools, and armor.
Hunter: Hunts all passive mobs. Requires a sword.
Guard: Kills aggressive mobs if they get to close and will kill you if you grief or kill a villager. Requires a sword and armor.
Messenger: Goes around and collects all the other professions extra stuff and puts it in "a main chest".
Priest: Creates potions and readable books about the towns history which the player can read. Requires paper potion materials.
Trading System: Basically there will be no more gold tools. (Instead they can make a different ore for gold tools.) But gold would be used for trading to the villagers and for the villagers to trade with each other. The villagers get a pay of 10 gold ingots everyday and they start out with 25. You can sell goods to the town leader or to the villagers. (villagers would only take certain items based on their profession but they would pay more for it than the town leader.) All the other villagers would rely on each other for what their profession items.
Bandits: There would be a new "village" it would be bandit camps. Bandits travel around in "packs" looking for players or villages! They will try to kill the other villages/player and loot all the chests and burn down the town. This would cause a very dynamic and more real environment.
Bandit Professions-
Thief: Goes around and looks for chests. Is skilled in pick locking. Wears leather armor and carries a "dagger".
Mercenary: Kills everyone/everything he sees. Wears Iron armor and carries a stone sword.
Flamer: Burns the buildings of other towns and/or the villagers. Wears leather armor and carries a flint and steel.
Archer: Kills everyone from a long distance. Will create 1x1 towers around 15 high to keep himself safe. Resistant to fall damage around 15-20 blocks. Wears leather armor and carries a bow and arrows.
Bandit Leader: Makes sure all the others are doing their job and fights also. Wears iron armor and carries a bow and arrows and a iron sword.
Extras- You can sometimes find a lost villager or a lost bandit in mineshafts (edit). Traps around the bandit camps like tnt traps? Villagers eventually respawn.

Steps:
1) in a folder address bar type %appdata%
2) goto .minecraft -> Bin
3) Open the minecraft .jar with WinRar or Zzip
4) take all the .class files and put them inside the minecraft .jar
5) If there's a jar folder in the mod put it in the bin folder
6) If there's anything to do with "sound" or OGG files put them in the recources folder.
7) Delete Meta-Inf inside minecraft .jar
8) it should work.
9) some mods are different just read the instructions.
10) have fun.
