I think that if the seasons are kept rather simple, then it shouldn't be too hard to implement or cause any other issues. I'm thinking it's as simple as:
1) Variable day/night cycles
2) More weather options; variable weather patterns based on seasons (such as more thunderstorms in the summer)
3) Tweaks to breeding/farming (faster in summer, slowing in winter, etc)
That's not too bad in my opinion and I think I'd like it. Things that are harder to do are:
1) Fundamental weather changes such as snow melting in tiagas in the summer or snow in deserts during the winter
2) Environmental damage such as walking around in the desert in summer without protection
Obviously, none of this is impossible because there's a mod that does it, but I'm not sure how much it impacts game performance. Mojang has to worry a little about specing the game outside the range of current gamer base

Get on my server and build a giant race track then from there make some booths and an area to gamble on which horse will win.
I like this idea. Also, I'll probably make a feature video on them in my main minecraft series, and name my horse something Lord of the Rings related. If it's a white horse, it'll likely be named Shadowfax.
I can appreciate it for what it is, but I don't really like building without at least a little geographical variety nearby. It makes the build not only more challenging, but the end result is often better as well.
I'd love to see more of the critters from Mo' Creatures implemented, especially the ogres/cave trolls. The ones that blow a hole in the ground when they attack are the ones I'm talking about.
I seem to have a sort of.. build order where food is concerned. I start out using the meats for a while, until I settle down somewhere. Then, I switch over to bread and whatever steak, chicken, and pork I end up running across. This lasts until I eventually get a potato, and then from the potato farm comes the food for the rest of my run on that world.
Have you tried creating a seperate room with double chests just for dirt, copplestone and such?
This is something that every minecrafter should get into. It's super handy. Just stick in the cellar of some remote part of your city/house/castle/fort/large anatomically correct body part and deposit and or withdraw as needed.
