Holding shift while clicking an item in creative mode from the block list will give you a complete stack. Shift and clicking an item on your hotbar will delete it. You're moving slower because shift is held down and you are sneaking. And because you are sneaking, it won't let you fly because that's the key to make you float back down.

Push shift 5 times, or hold shift and a different button and see if it goes away.

This actually sounds like quite a good theory, I just turned sticky keys off on my computer for Minecraft. Now I can spam shift all I want
