Having a girlfriend who loves videogames even more than I do, and being able to play with her (Minecraft, and a few other games) almost everyday (that we have a free day together... which is not that often, but hey...)

The problem is exactly as Delay3d described. You have over extended your RAM by quite a bit. Your mac should have no problems playing Minecraft as long as you are not hosting it as well. For playing the game, any modern Mac will work well and then you can use your current one to host it.
I play every game like this, (hoarding) because I have this unfounded idea that it might be needed later on. I suppose the only way I can justify it to myself is that I'm rich in the game just not liquidated lol. Minecraft though is a different story, as every block has a potential to be useful.
The two previous posters are correct about the spawning, and like Leokins said the terrain might get really weird I would recommend that if your world is that old that you should probably start a new world to avoid the weird borders.
I am not really a fan of the new grass either, like Gamebuster said, well maybe not as bad. The sand now is also terrible, I didn't think it was that bad before.
From the pictures it looks like you may not have included an FTP server, I would suggest adding this and putting it into the same menu as the drop down for bukkit, tekkit, webserver as well so people could easily configure it.
It may also be worth having the browser come with default bookmarks to the various minecraft sites, like http://bukkit.org/ for super simple use.
You could see that anyway. Render distance only affects how many chunks are loaded and rendered, but the chunks extend (and are visible) all the way from bedrock to sky level, no matter what the setting. Only the horizontal view distance is affected.
I understand that, I'm just saying as most people tend to 'hide' things underground the horizontal view distance doesn't mean much as the underground is revealed.
It sounds like one of your mods is causing this, I would suggest uninstalling a single mod at a time until you find the issue. You could also list the mods you have here or post the whole error you are receiving.
