    I think simple trading with NPCs is basically the way to go for now in this department. I'd like to see how a simple trading interface works, and can trade items with the player. Randomized thoroughly and endlessly generated, you could then pick and choose what "quests" you'd like to go on. Would be simple to implement and add something to the game without changing it completely.

    I thought about the idea of endermen stealing items from the player... but I wouldn't use endermen. I'd use a creeper.
    Maybe a baby creeper or a different coloured creeper. Or maybe a mob with a big delieriously happy face! He sneaks up behind you, touches the player. Takes something, then tries to run away! and he's fast!

    Make the endermen more creepy. Let the staring thing be dangerous to the player, such as making him move closer tot the player when the player is not looking... or having the staring thing drain the player's strength. At the moment, endermen are too passive and easy to kill.

    Make another mob that is deliberately cute and annoying like the creeper, but likes to re-arrange your stuff.
    Maybe a pink, female creeper that likes to "redecorate" things by kicking bricks out of place around instead of blowing them up!
    ...after all, creepers have to breed somehow. How would they do it if they just suicide bomb all the time?
