I FOUND THE SOLUTION!
[12/30/11] Updated! Armor changes added! Yay
After reading many many coments. I came to the conclusion that their were many folks who like the game as it is now, and many like myself, who hate it for being too easy. Rather than cater to only my self and others. I realized the game is what you want it to be! I totally missed that obvious point from the beginning.
So, how do we fix this issue? We expand the Difficultly settings! That way, the folks who like it now, and the ones who want change, are all catered too at the same time.
Here is the chart I wrote up while I had down time at work tonight.
Difficulty Settings
Peaceful----------------Just like peaceful is now, no mobs.
Casual------------------Casual is the current normal difficulty. For
those who like the game as it right now, and
who want to build a lot, and fight a
moderately.
Normal------------------The current hard difficulty
Hard--------------------How hard alpha once was.
Very Hard---------------For the people who want the game to test their
skills to the max.
Hardcore----------------You face mobs who have never known defeat, who laugh in strange tongues at
your efforts to survive. This is suicide.

Now why should we add and change all this up? To allow Minecraft to cater to more player skill levels and likes.
Some of you told me the game is hard enough, and you just like build a lot and fight some, either casual or normal is for you my friend. For those of you who want to fear the night and want to have mobs punish your mistakes with lethal force. You need Hard mode or even Very Hard.
If you want to WIMPIER AND CRY YOURSELF TO SLEEP inside your home...choose Hardcore. Where mobs WILL stop at nothing but to END YOU.
See what this does? It gives minecraft a greater range of caterence. You now can pick the difficulty that best suits you!
Does this please you all? If you like the game as it is, you will like this, because you can KEEP playing the way YOU WANT TO. It is your game, play it how you want, but let me and others play it how we want.
Additional Difficulty Settings
Pick a setting that best suits your needs, wants, or skill level.
Things that come from higher difficulties. Decreased mining speed, decreased armor damage reduction, and increased mob damage.
This is the mining rate for stone blocks (NOT stone bricks).
Peaceful, casual, and normal difficulties. The idea behind it is to hook into events, like say a creeper blowing up.(simple example incoming XD)
Creeper Explosion= 10 radius
(Modded) Creeper Explosion = 20 radius
Of course it would be a completely different wording and such for coding but the basis is altering the game code in a controlled enviroment, so the original code is still there but the mod tells it to expand the radius.
The Mod API is basically the modders special languages to alter the game without breaking it. Think of it as a translation book, it has the original language say english, and the new language spanish.

The only difference is you are given the option to open your world the way you want EG.
So don't get all raged, they wouldn't do something stupid like force multiplayer, or else no one could ever get their adventures maps made, and the guys at mojang love adventure maps.
TL;DR
Think like an adult not a kid, this is a business, they will not destroy a chance for a sale by drastically changing the product.
Hence they will not turn Minecraft into an MMO. They will leave it a sandbox, choose how you want to play game.

Things inevitably change, they are making an official API to make modding solid, this will end alot of the "dang it the new updates out, now I have to wait for bukkit/modloader/canary/specific mods or plugins to update boohooo!" and it will guarentee a specific mod or plugin works, no more blackscreens because it will all be under a specific code format, those who say this is the end oh no, no more mods, no more open choices are foolish, they are going to hand you the tools to create your mod/plugin and give you the assurance that it will work without a hitch if you followed the API they have given you.
whats so bad about that? god forbid everything will finally be compatible, take a moment to imagine the new door that has been open, mods you know and love that will work on a server side by side with block protections, more mods that will work in SMP without 85 different modification to your MC.jar.
the possibility to open up minecraft click on your favorite server and play with thier own custom items, texture packs, sounds, and who knows what else.
stop closing your mind, and start opening the door into possibilities!
