If cheats are enabled, you just press the "t" key, then put in the code "/spawnpoint @p [your desired coordinates]". Alternatively, pressing the "/" key will take you to the console immediately with the "/" already there, saving you about .01 seconds.

If cheats aren't enabled for the map, then you can try putting the map on LAN (the option is in the immediate pause menu), and clicking the "Enable Cheats" option and activating the LAN. You can then do whatever commands you need to do, although once you leave the World and go back, the cheats will be disabled again.

A large surrounding rural area could also help the medieval town blend into the environment more and make it a bit more realistic. If you want to have a good idea of how many homes and other establishments you need, it might be a good idea to consider what kind of population you're building for (I'm assuming, this being a medieval village, it's probably a rather small population) and what they would realistically need. They'd need sources of food, water, supplies, etc. So, farms, some kind of body of water nearby or even a river dividing the village, a marketplace, etc.

Also I don't think anyone mentioned a blacksmith. That's always a nice little medieval-style establishment.
