From what I understand, Enderman aren't supposed to even touch blocks placed by players, and like many have suggested, it could simply be a glitch. Also, the thing about the Enderman is that they're a sentient entity, to make you feel as if "You're not alone here", to kind of give you that fear that there's someone else capable of building or destroying you, or your property. The fact that Endermen can move blocks is a terrific addition to Minecraft. Why? Instead of mindless mobs like Zombies, skellies, and creepers, who for the better part, just walk around aimlessly until you come in contact with them, endermen actually interact with the world. You also have to consider that, even though they're a new addition, In the world of Minecraft, they inhabited this world before you did, so you're the stranger to THEIR world. For once in minecraft, you have a mob that you can actually work side by side with without having it kill you (unless you look at it) or can keep fighting against when you encounter eachother.
This isn't about a griefing mob, it's not even about griefing, it's about you getting used to the fact that every mob before now were easy, predictable, and for the most part, stayed out of your way. Now that you're "Inconvenienced" you get into a tizzy and wish to have something that adds to the game, taken away. It's simply laziness. Quite frankly, I don't care how many hours your put into a creation. Obviously if you're playing in survival, you have to deal with these consequences. However the thing about survival, is the key word in survival. To survive, it's not so much about building elaborate mob killing factories or fancy towers, and the like, it's using what you can to make the most of your situation. Even when you get to that point where you can build all these awesome creations, if you're building in survival, you have to deal with the reppercussions and that means the destruction of property. It's part of the game. If you're ever so worried of your preciouse creations being destroyed they simply play creative. It's what it's there for.
The Enderman are fine, and should simply stay how they are. It is a challenge, even if it is an annoyance. Some of you don't even consider it a challenge but just an annoyance period. Well, aren't most, if not all challenges annoyances? An inconvenience? Most certainly. It's getting around them that make them a challenge, so those of you saying the Endermen are just an annoyance, you're contridicting your points. You're presented with a challenge, but you're just too lazy to actually want to come up with a solution around it. Instead, just want to issue taken away with no effort on your part, which is pretty pathetic.
Also, i'd like to point out, that, despite Minecraft being a sandbox genre where you can build anything, giant mob killing factories, are, in a sense, cheating. Yes they're fantastic in their construction and redstone work, but they're not in the true spirit of the game and really does take away from it. I do understand not wanting to grind for items like gun powder, but come on, you probably use Too Many Items anyways.

It seems that for anything Notch dreams up there is a group of people who will slavishly slobber all over it like it's the greatest thing on Earth. I mean, honestly, these guys are defending a mob who picks blocks apart and makes circles on the ground, and they're acting like that's some brilliant, dangerous, fascinating behavior. Some people are plain delusional. There's really no other way to put it. But that being said, I still don't care if they have the option of keeping said feature on, as long as I have the option of opting the **** out."

I could say the same thing about people who make mob spawners. I think its ok, because i like the idea of "zombies" that pick up blocks.

Um.the code and seed generators changed so that changed a billion worlds as well. Theres you problem in a nutshell. The endermen cant do that damage in that much time.

Change that to anything you like and you will get the probability.
