They will be able to use axe or pickaxe, but they should be limited to an area(Quarry for example - 20x20 size is more than enough, or Garden - 10x10) and should be able to craft tools too, thus making villagers nondestructive to player's and their own buildings as well as the nature in general. I've seen mods do that, I am pretty sure vanilla MC can have that too.
Priest could very well enchant warriors' armor for food, alchemist can exchange his potions for food and raw materials, etc etc.
I like this idea, but having different tiers (iron, gold, diamond, etc.) seems pointless and a bit weird. I think it would be better if there were just a cart for every wood type.
Agree with this, but IMO there should be iron carts or armored carts. They would be more resistant to TNT and stuff; and tbh chests could also be placed instead of people

I want to test its vision and ability to show any kind of moods - imprison 4 villagers - one in emerald cage, another in golden, third behind iron bars and 4th between TNT and cacti walls. What are their reactions? Also I would like to put them in huge windowless building and wonder will they just jump out of their windows or not if you spawn a zombie?
Minecraft is Minecraft, not survival. Minecraft means craft/biuld ANYTHING. You have wide(but still narrow) selection here what you can do. Participate in team battles with Iron Golems, slay spiders, heal mobs, trade, build... And finally there is creative mode. It just IS NOT possible to stand for sandbox survival.
