Although the way you've presented it seems like it would cause pumpkins to be able to supply seeds without being destroyed. I'd prefer it if seeds weren't obtained from the carving process.
Armour enchantments don't need to be nerfed in terms of the level cap. If a nerf is going to happen it will be a change in the effectiveness of the "levelled-up" enchantments. By this I mean that protection I should stay the same, but further levels should not be such a big improvement from the level 1 enchantment.
Why does everyone feel the need to have a rapid-fire ranged weapon? If that's ever gonna happen it'll be an easily portable dispenser.
Anyway, onto the reality of crossbows: THEY ARE HARD TO LOAD. It's bad enough that arrows magically appear out of your inventory when drawing a bow. It's even worse that you want to have an extremely cheap(compared to diamond equipment), easy to aim, super-powerful, long ranged weapon that fires faster than a bow.
Crossbows should aim and fire faster than a standard bow, but also be much more expensive and a little more cumbersome.
This would be reasonable, if testificate zombie heads specifically can be obtained in another snapshot then regular testificate heads should be acquirable through the same process.
I feel this is the best way that vertical redstone has ever been suggested.
I would especially like it because opening a fence gate could cut off the current.
The fact that they conduct redstone but don't use redstone in the crafting. A single piece of redstone being adding to the crafting of the fence (gates shouldn't really matter) to make it into conductive fence would be reasonable.

The reason the end is so void of life is because it is a boss room, more than it is an actual dimension.
I like the idea of a boss which has unique stages and actual minions.

It seems like what you've done here is taken pretty much all the worst ideas that other people have had about the armour and crammed them together.
Your suggestion here would just make all armour practically the same and have no special aspects.
Only thing I can support here is using leather armour as the base for higher tier armour(especially for iron).
Other than leather being pretty redundant as useful armour, all of what you've suggested would take away from the uniqueness of each armour tier.
