Look up the ultimate nether survival vanilla command block map. It's fun and JoelCraft is doing a playthrough on it. disclaimer I did help work on it, but i still think its fun enough to give a whirl whenever you're bored.

I think this server sounds like really really awesome (if it was only done by one person i would cry because it wouldn't be up to its full potential). My only problem is that I am a crap builder, but a decently good redstoner, so I cant help, but I really think this is cool.

lol, let me rephrase that. of course there is :D. I am saying that at least for a beginner, I wouldn't suggest much more complex other than doors, farms, smelters, etc, because you most likely would have an idea as to how these subjects work, and it isn't completely foreign as an idea. Of course, you could do PLENTY of things. create minigames, lighting, even scenery features, like rising and falling waves; all I am saying is that I would just suggest whatever you have the best knowledge of (of course it isn't bad to attempt new things as you can learn).

try and do stuff with farms, or smelting. those come in handy the most in survival. There isn't much to redstone outside of command blocks that aren't doors, farms, smelters, etc. I would say don't worry about the size for the most part. making something work is the hardest part. Then you look for ways to condense it, and make it faster, smoother, etc. (but mainly condensing it).

put a sunlight detector below it, and it will also give out an output.

digital clock as in you want something to output infinitely as a pulse of sorts? I would suggest two hoppers facing into each other with a comparator on one side. then you throw in a item. Same as IDW said with the tnt dispenser- you need to use water to move it if you aren't moving it in any other way. if you don't move it, it will most likely explode the dispenser.

put down a hopper, shift click and put a hopper on the other ones side, then break the first hopper, and shift click a new hopper onto the previous hopper. A comparator gives out a certain signal strength based upon the blocks inside the container it is connected to. Items you cannot stack give out a higher output than normal items. The more items inside the container the larger the output from the comparator is. This is the essential idea of comparators.
