You look at it close up or select it and text will appear. Can be user created and can take up to ten lines of text? It would be better then creating massive words out of blocks.
And I really don't see pixel art as "major projects" unless they really are MASSIVE with many colours. My G&W pixel art took me hours to complete, but I really don't see it as anything more than the everyday pixel art sculpture.
There would be a few problems with doing it as Minecraft is as of now. The first block you take out might have a mine under it, and we all know that it's never a mine on the first go. Also, with the thing where if you take out a block with mines nowhere near it, it wouldn't all clear the large space automatically.
Edit: Scratch that; I may have worked something out...
In this case, the sponges are mines (they stand out), the stone blocks are uncovered squares, the colours correspond to the numbers in the original game (blue = 1, green = 2, red = 3, cyan = 4 (4 isn't actually cyan, but there's no dark blue!)) and the mine blocks are marked by putting leaf blocks on top of them.
Okay, the game could start out like that, with a clearing already shown for the player. Every "number" block around the clearing should have the stone blocks taken off of the top of them, as shown. Make sure the inverse corners are uncovered as well.
Go ahead with marking as you normally would, taking away the stone blocks on squares that you know to be safe.
When you get to a clearing, you will know by seeing the ground instead of any numbers.
Then you can just clear the clearing manually.
So as far as I know, this method should work fine. Just be careful not to make any mistakes when setting it up, such as putting the wrong numbers or not completely surrounding mines with numbers.

And I made my Liru skin pixel by pixel. I'm not used to Photoshop so I just used MS Paint.
XuX: Yeah, I think that looks better. Though it's not too visible. It definitely looks nicer like that!
