If the block has no states the blockstates file could target, the only available variant is an empty namespace.
If the block is a liquid by what it's name implies, like water, we can't help you since the polygon model of water/lava is hard-coded and is not part of any resource pack.
They added "preferably" at the end, so you could at least have asked for which path they want to go for, and voiced the pros and cons of each path.
The way you handled it made it look like, from an outside perspective, as if there is no other way around the data pack, since they didn't make the connection of Optifine and item changing texture/model upon rename.

You don't need media fire to upload your pictures, you can directly insert them below the text editor of this site.
Also, if you make the whole texture one color, you might as well want to make it just one pixel big.

The world on a server doesn't provide a resource pack.
You would need to have access to the config file to link the resource pack from another server. (like a file hosting server)
But this doesn't mean everyone is affected, everyone can then decide for themselves if they want to download and use it.

If you have Paint.NET, you could try my selection tool technique.
Use the area selection tool and select all the pixels you think should be in the texture.
Then, at the top right, next to "tools", you can see some settings for the selection tool, one of them says XOR.
With XOR enabled, you select the whole texture from top to bottom.
Now you can drag the selected area (blue mouse tool) out of the texture, or cut/delete it out.
Note: Holding [Ctrl] will add selection areas, and holding [Alt] will remove selection areas. (quick access to add and subtract settings)

You go into the item model and change its display → scale values. (boundary is 0.0 to 4.0 since 1.8.3)

To me, it doesn't look like a chunk or texture error.
To me, it looks more like a modded feature problem, since I can't think of the model missing either.
I can't help with modded features, but nothing of these pictures indicate a vanilla problem.
