Most people use custom texture packs anyway, so the fact that they'd waste their time redoing the default textures baffles me. It'd be far easier for them to just release an official Mojang resource pack somewhere.
They aren't wasting time, Jasper is hired to redo the textures so the devs doesn't have to do it themselves. -

Maybe they do it on purpose. after that they release some kind of shop where you have to buy the old horse model for real money.
Microsoft style...
What makes me sad is how they ignore the community. Im not against change at all but i hate how they stopped listening to the feedbacks..

“The horse! Adding horses was one of the most requested features for a while. Everyone wanted horses, and horses existed in the MoCreatures mod, so we actually asked the developer of that mod if we could get his help and use his model and his code to add horses a little bit quicker. In the end though, we kinda ended up rewriting everything. And now in the next update we’re gonna change the model as well. So it’s gonna get a more Minecraft, style. The current horse is a lot more detailed than the other animals, so we’re actually gonna simplify it and make it a bit more blocky.”

Just because you can't satisfy everyone, doesn't mean you should make downgrades to the game. Sometimes when the community is divided on something there is an objectively right side, and that side should always be taken into consideration.
Not being able to please every single player also isn't an excuse to do things the majority of the community dislikes.
Uhgm did I say that Mojang should downgrade stuff? no, all I'm saying is upgrading the current model of other passive mobs could make a lot of people not happy about it. -

But that's the problem that we have with what they've decided to do. Rather then improving all the other animals to make them look better, they're downgrading the better looking creatures to make them look simple and worse off. If they really want to improve things by changing how creatures look, why don't they use their texture creator to... how about... add more variety to mob skins? That way we don't see the same pink pig thousands of times over.
Same exact thing would happen if Mojang decided to upgrade the current models of other passive mobs, there are going to be people going around telling the devs that the current models are "iconic" and upgrading them is "unnecessary". So yeah you can't really satisfy people these days. -

The only problem that I have with the new model is that the head, the head simply looks deformed and more dog like and the tail looks way too short. Maybe modify the head to look like the old one and make the tail longer too.

1 Microsoft didn't bought Minecraft, they only bought Mojang and 2 Microsoft has nothing to do with the development of Minecraft in general, maybe besides the marketplace in the Bedrock Edition(Tho they are optional, you can still download free stuff).

Because your going to have a groups of people going around and telling the devs that the current mob models are "iconic" and the change is "unnecessary". Not saying that Mojang should downgrade stuff or anything like that.

Some of them looked to detail and some are straight up bad(looking at you andesite, diorite, granite, and the diamond block). Personally tho, I liked what I'm seeing so far, the new textures looks so much better(to me anyways) and much more consistent.
