Caves are a lot more interesting and fun. They also yield a large number of ores as well. The only time I would make a mine is to find a cave system.

I do this sometimes. Mostly cause when your done with a huge rectangle it can double as a mob trap, and is good if you require large amounts of cobble.
I don't really care for the checkerboard pattern. Try parabolas next time (easy if you have a graphing calculator). Other than that, Bridge of Khaza Dum FTW
There are several species of mushrooms that are known for their bioluminescence. I think Notch wanted to create a species of mushroom that looked natural and glowed for an awesome asthetic feel.
I think if he really wanted bioluminescence, he would have made it more like level 5 light. I think it's so you can see them in dark caves.

God dammit, I thought we covered this already. Bedrock has a hardness of -1, therefor hitting it only makes it stronger.
