I have yet to find a single village, and I've made my fair share of worlds since 1.8 was released. I'll let you know if I find one and what biome it's in.
I always thought that those who bought the game in Alpha should get one cape, and those that bought it in Beta get another. Those who buy it after the full release get nothing, and they'll like it.
I like the feature, but IMO, it needs some tweaks. I think you should be able to use lower-tier tools to somewhat restore the durability of higher-tier tools. Say if you have a steel pick and you come across some diamond. Then, instead of using the rest of your steel pick, you save it for when your diamond pick's durability has gone down. In this instance, you could use what's left of the steel pick to restore a certain percentage of uses for the diamond pick.
I just downloaded this mod today, and it is amazing. It's exactly what I wanted with skills and it's very similar to your idea. I think it would be great if Notch could implement this mod just like he did with the pistons.
It's not the structures that people are upset about. It's the potions, enchantment, new realms, hunger, etc. Personally, I like it all. But of all things to make optional (*cough* hunger *cough*), why structures?
There are a few things I would love to see in oceans...
1-Sponges. We all want it, and it's in the game already.
2-Sunken ships. You can find gold in the chests 8D
3-Hostile mobs, like sharks.

The way I see it, there is plenty of room for different game mode in Minecraft.
1- Creative Mode
2- Survival mode (pre-1.8 style, no hunger bar, food heals hearts, no sprinting, no RPG elements, food does not stack). The theme for this mode is tension and fear, everything that made pre-1.8 great)
3- Adventure Mode (everything from 1.8 and on). This is the RPG game mode for people who like that.
4- Hardcore mode (not a mode on its own, but can be tacked onto Survival (making it Survival Horror) and Adventure modes)
5- 'The End Is Near' Mode : always night, time does not pass, mobs have 50% increased aggro range, Skeletons shoot 50% further, Creepers have 50% increased explosion distance, Zombies move 50% faster, Black Spiders can shoot spider-webs to slow you down. Hardcore is optional for this mode.
I was going along with it until that last one. I pooped my pants more and more with each thing you listed.
