I agree that they should fix this but sugar cane can be harvested via piston. Once set up you can harvest with one push of a button or even set it up to auto-harvest.

If you create a world with the same seed after an update as one that you had before the update most everything should be the same with the exception that there might be additional blocks, structures, biomes, etc. if those types of things were included in the update and if the seed would dictate those things should generate.
If you don't want everything in the same place play a different seed.

Go into options and see what has been turned off/on. I believe hide hand is one of the options, I don't remember if inventory has something similar.
If not that, I don't know.
You also tagged this 'Java' but I'm assuming you're playing 'Bedrock' since its on a phone.

Bedrock version doesn't have mods, you would need java.

Try putting kelp in that corner so they can't get stuck there. They may swim around then or they may just find somewhere else to get stuck.

I don't know how to do what you're asking, but I've found that even with the signs creating a one block area with no water the mobs will bump into each other and push the one in front into the bubble column; and then the next mob will push the one in front into the column and so forth.

There are differences in the way pocket edition (also referred to as Bedrock) and the Java version work. When you look for tutorials you'll want to look for ones specific to the version you are playing.
The wiki will also generally note differences between versions.

2. Destroy the portal in the nether and line it up with the one in the overworld. Y coordinate is the same as overworld, one block movement horizontally in the nether is equal to moving 8 blocks in the overworld.
3. Zombies. Must be a glitch where the game is treating iron doors like wooden ones.
6. Zombies. When a zombie goes in water they will sink and once they are submerged in water long enough they will convert to drowned. When they convert they drop any armor they were wearing and it floats to the surface.
7. Same as #3.

On console you used to be able to add a second player and just park them somewhere safe by your farms so they would keep running while you were off doing whatever. I'm not certain if this new bedrock version still has local multiplayer on console. If you're on pc or mobile then you're out of luck.
As tails said, what you're observing is how the game is designed to work. Once you move a certain distance away those areas stop working.

That button was useful on the console version due to the limited size of the nether. An infinite nether really doesn't need to be reset.
There are a number of ways to cover long distances fairly quickly.

May be helpful, from the wiki, "The slime chunk algorithm in Bedrock Edition is different from in Java Edition. The algorithm doesn't depend on the world seed, thus the chunks that slimes can naturally spawn in are the same for every world."
Slimes also spawn in swamp biomes at night and the wandering trader will sometimes sell slime balls if you're looking for alternative ways of getting slime balls.
