One issue with bugs is that they'd essentially have to be purely passive creatures, or not be able to kill you. **** off a hornet/bee/wasp nest, they chase you and sting you for a bit, dealing maybe half a heart every few seconds, but won't take you lower than half health. This is, of course, assuming they are the small size of actual bugs, and not scaled up. And this is due to the whole FPS gameplay thing making it hard to really hit a fast moving bug. Hard enough to hit a fast moving bat.
Another option is to pick bugs that would make sense being large, such as the dragonfly idea. If giant bees are added, a giant bee nest would be a great place, having honey that has the movement properties of lava, but doesn't hurt you.

The easiest explanation would be to repeat the previous statement of "they are revamping the combat system". It will take time to do that, and they likely want a lot of it done before they even attempt to release it to the public. A long wait before a big update is better than short, quick updates that come out often, and add in very little finished content.

He was asleep during the time he was AFK, so that wouldn't have worked

Yeah, I guess that could work

I'd have to remodel part of his house just to fit the portal in. I could rebuild it, yeah, but I also don't think it would be nice to leave him stranded in a potentially deadly part of the Nether.

Not without building a new nether portal in his house.
