I've been living out in the ocean for about 2 weeks now. I started by building a small house within swimming distance of the mainland. Then, I got ambitious and swam in one direction for about 40 minutes (real time) I found a small island and set up shop. I eventually died and respawned at my original house. I attempted to find that island following the same criteria I had originally, which was to swim in one direction ... I never found it again. Instead I've found a second location which I have been currently building at for the past 2 weeks. Its amazing whats actually happening on the ocean floor. If you sail at night you can occasionally spot light coming from the ocean floor. Often this is coming from a crack in the surface which is allowing a random torch to filter threw.
Living out in the middle of the ocean isnt to bad. The one thing I recommend bringing with you though are sapling, seeds and a bed. The rest you can find by digging down.
Here's everything I've done thus far in minecraft survival. One of the best aspects is the unique journey you take. Currently, I have ventured deep into the ocean and am attempting to build a gigantic castle in the middle of it. I've uncovered sunken abandoned mines and learned to live without many of luxuries I grew accustom to on land. Have a look when you get a chance!
