I have actually come across endermen eggs in a chest in a stronghold, I believe it is actually a hidden secretive part of the game. Considering that there is an end portal in strongholds, it could be so that you could spawn an enderman and kill it for its ender pearl without backtracking out all the way out of the stronghold, but its like a super rare chance of spawning in the chest, I've only ever seen it once after going through like 15 strongholds on different worlds.
