You said it yourself, it's because of the gameplay. They play because of the gameplay, and use shader packs and high res textures to ENHANCE the gameplay. 18,313,712 people have bought the game. Do you think they bought it to get shaders on it? No, they bought it because of it's gameplay of simply mining and building. Out of 18,313,712 people, less than quarter of the players use Shaders, and this can be backed up by the downloads number comparison.
I know, the game falls behind modern day gaming standards. But if it's selling, it's making money. Even though it has bad graphics, bad textures, everything, the game is growing, and you cannot deny that. They will have to add some shader style graphical support and some code clean up, but for now, Minecraft is making money and they do not need to add high-res textures. Some people like me prefer the pixelated textures that Vanilla Minecraft brings, HD in a blocky world may seem weird for some people including me.

Our Realm is a vanilla survival Realm where we just build stuff, make farms, explore the nether, and generally just survive and play together among other players. We have a mature community (All of them 15+ with older players) and dedicated players. The players there are mostly American, but most of them play late so you'd be able to see players on frequently, also I'm from New Zealand so we'd probably see each other online couple of times

I don't know about other people, but for me, low fog distance brings back the nostalgia.
Makes me feel like I'm actually exploring instead of going "Oh that's a jungle biome 100 blocks away, not going that way"
