I don't go around claiming to be a modder. I'm just a builder. When 1.8 came out though I made a new world that very day to start building in, I didn't keep dwelling in my old 1.7 world just because that's where all my old work was. What I'm saying is there are literally no 1.8 mods because the modders keep using that same excuse you threw at me. By the time they update to 1.8 then 1.9 will probably be out. It's rather pathetic that Skyrim has more recent mods than Minecraft, considering the whole point of this game was to build, and Skyrim is just an action RPG that doesn't even have multiplayer.
You realise that the modders need to decompile all the obfuscated code themselves if they don't wait for MCP, Forge to be released. 1.8 is a massive update that nearly changed like (if I'm not wrong) half of the code (or a lot of code). Treat it like someone sent you a really long message in a foreign language (that you cannot find any information on) and you have to decipher it yourself and you have to craft a message in that exact same foreign language. You cannot compare these Skyrim with Minecraft as what you said. I personally don't play Skyrim so I don't know how complex the game is but Minecraft is really hard to mod, especially this humongous mods that add a lot of things into the game. I can assure you that most/all of the modders are trying their best and spending a lot of their free time (which they could use to do a lot of other things) to update a mod for you to enjoy.
