Not a bad idea. More varied base mobs, much like the husks and strays would add more to the game. It should do something a bit more unique then the standard spider. A poison spitting attack with a cool down could be interesting.
I think polar bears will make a good addition and will add more life to the world, but I think having multiple bear types would ruin it and make finding a bear less special. No Support.
Not a bad idea. I wouldn't mind if the villagers or possibly witches could give quests and rewards for completion as well. Perhaps down the line something like this will be implemented, but maybe there should be a box to tick when creating or loading a world. This way you could either play with or without the quest system.

This sounds immensely overpowered. You say one option to take it down is with diamond weapons, but it also tries to stay well outside of melee range AND fires shots which slow you down, making it impossible to ever actually catch it. Therefore, the only real way to attack it is with a bow. However, unless that bow is enchanted, THAT won't even do any damage! And should my bow break, or something, and I'm forced to run away, the fact that it can slow me down will ensure that I can't escape it! This is FAR too powerful for a mob which is "fairly common everywhere in the End".
I can appreciate wanting more difficult enemies, but you need to keep in mind that Minecraft is not, primarily, a fighting game. Unless a Boss Health Bar is appearing on the screen when a mob appears (thus signifying, "THIS IS A NOT A NORMAL MOB!"), it should be fairly straightforward and easy to understand.

Guys please collaborate on the idea and don't just tell me how much you hate it. Doing this will not help me improve it. For example don't just go "TO OP NERF NERF NERF" (extreme example) please actually contribute ideas/changes like "If it did this instead of this it would be so much better because of this" or "This needs this so it can function better with this". Secondly no it's not, skeleton stats are some what similar apart from the added invulnerability to non diamond/enchanted weapon, limited flying and slowing attack, also don't say "what if i don't have diamond" how'd you get the obsidian to make the portal then?. Thirdly your name is "NoSupport" so it's safe to say you're just trolling. Lastly you sound like you hate a challenge and expect enemies to die from you breathing on them. The nether isn't meant to be easy.
Ok today I have a rather unique mob that'd would be mainly for the nether or very deep over world caves.
Name: Frost Wraith
Spawn/Area: extremely rare in the over world, but in the over world they only spawn in deep caves. Fairly common everywhere in the end.
HP: 10
Damage/Attack (Ranged): 1 (easy) 2 (normal) 3 (hard). It shoots a ice shard every 1.5s that flies at 8.2 b/ps (blocks-per-second) and will also slow players hit movement speed by 40% for 5s.
Movement Speed: 2 b/ps (blocks-per-second). Player movement is 4.3 b/ps while running and 5.6 bp/s while sprinting.
Special:
1. This mob can only be damage by enchanted weapons, diamond weapons or fire/lava.
2. It is invisible to players that are 20 blocks or further from it.
3. Can fly up to 3 blocks high in the air to get over small walls or other obstacles.
Fighting Style/AI: It will try to maintain a distance of at least 7 blocks from players and can shoot while on the move. It will side strafe once at a safe distance.
Drops: Has a 30% chance to drop 1-2 ectoplasm. This is used as an ingredient in invisibility potions.
I don't know too much about the battle mechanics behind Minecraft, so I could be wrong, but doesn't this iteration have 1/4 an Ender Dragon's HP, and an attack equal to the dragon's attack...in Hard Mode? That seems grossly overpowered for a randomly spawning mob, especially one with such an advanced AI.
After googling the ender dragons stats I realized this might be overpowered to some extent, but I think if the damage and health was lowered a bit it would be fine. This would be a much better damage model I think. 5 (easy), 7.5 (normal) and 10 (hard). The health will go down slightly -10hp

I like the idea of stone signs, as this would add further customization to the game. Simple, but good idea.

In Black ops 3 you can run on the walls. This sort of thing doesn't fit into Minecraft imo.

Ok now after some review I realized this mob would be much more appropriate for a dungeon boss of sorts, since now it can only spawn in dungeons.
