I like it, but what if I want to keep my dirt from becoming mud? Perhaps you have to waterlog the block by crouch-placing? Can you grab the block without silk touch?
Wood, lots of wood. I like to place the first blocks of my house as cobble or stone bricks then place logs facing upwards on the corners of the build and fill in the rest with wood. It's basic but nice looking.
For more spice on your mainly cobble builds, you can replace a few blocks of cobble with cobble stairs so the wall looks as if some of the bits have fallen out. Another way to add spice is to replace some blocks randomly with stone bricks or adnesite blocks for more variety.
I agree completely with everything you said, especially the foodstuffs and biomes. A few food ideas I've wanted for ages include Apple Pies, Chocolate Cookies, Sandwiches, and with the addition of bees, they could add some recipes that involve honey, such as Honey Buns or Sweets.
Biome wise it'd be cool if they would spread villages to more boomed such as jungles or ice spikes biomes and having shelters in the top of the ice spikes and in the jungle trees. Or even just trading posts with a special villager (like the Wandering Trader) inside with helpful trades for an adventurer.
There is a few of my ideas I hope to one day be implemented into Minecraft.

That would be a great addition! Maybe they could add bird cages or bird houses as well!

I really like the first part about signs as it seems more reasonable and possible. I just don't think Mojang would implement block rotation.

Sounds cool but what would happen if you had different types of armor equipped? Would the powers only work with full armor of the same type?

I imagine a gollum-like creature crawling to a torch and nabbing it and giggling madly but that would be too creepy for Minecraft.
