Prior to 1.8, Minecraft was simple. And that wasn't a bad thing. For a game that makes everything a block, simplicity is good. There were no major complaints regarding the health and combat systems, nor were any minor ones justified. 1.7.3 worked.
Then, 1.8 came. It's largest effect was on its manipulation of existing systems. Combat, moving, and survival itself were all changed with the introduction of hunger, running, criticals, and the plethora of other new features 1.8 brought. While change is necessary, it is not always good, and in this case that is most certainly the case.
Why are hunger, sprinting, etc. all so bad? As said, 1.7.3 was simple. With that simplicity came an air of freedom, and you were not truly bound to any sort of specific system save for the necessary tree punching. You could do anything you really wanted and not be punished for it. That is why Minecraft has its phenomenal status today, and it is this condition that 1.8 has partially ruined.
In short, 1.8 adds complex systems into the game. They are unneeded and complicated. Why forsake new blocks and biomes for a completely new system when the current one WORKS? It seems that hunger and combat were added simply just to draw in a new crowd under the guise of realism, and after a few months of gameplay, I think that seems fairly agreeable. 1.8 forces you to rely on food and on saving your hunger, making every extra step and jump a monotonous (NOTE:NOT CHALLENGING, BORING AND REPETITIVE) step to your progress.
This is a huge problem in a game where jumping, breaking, and moving are constant operations that you need to perform on a regular basis, sometimes on a mass scale. It is a huge impediment to the cherished actions of building and mining, and serves as no real challenge when the old food system was arguably just as challenging, but not monotonous. There is NO real justifiable reason for hunger and the combat system changes save for realism, which should never come before gameplay. While some people may prefer this realistic sense, I can say for sure that many people enjoyed Minecraft before this unneeded complexity came in, and that the old simplicity we enjoyed should still be an option.
Just add Simple Mode. Simple Mode should replicate 1.7.3 by having:
•No hunger
•Non-stackable food
•No sprinting, criticals, etc.
•Respawning passive mobs, no breeding
•2 hit diamond swords, zombie feather drops, etc.
We should not be forced to a new system for the sake of realism or popularity. While the same might not be so in real life, the fact is that this is a game that lost a huge amount of appeal when it went down the road of typical fantasy games and got potions, enchantments, regenerating health, and criticals, all seemingly from a new Elder Scrolls game. Why not just go back to 1.7.3? Because something as cherished as classic MC gameplay should be still accessible from the game as is. And because, quite frankly, saying "there's a mod for that" is against the rules and very rude.
In conclusion, 1.7.3 had great gameplay that was basically ruined by the wave of unneeded updates. We should not be forced to these updates, ever.

But on a more serious note: maybe this game isn't for you. Minecraft is about making your own fun, and doing what you will with your world. You... don't seem to possess that ability.
Basically what this guy said. Try this: make a map, and go exploring. You won't get lost, cause the center of your map should be where you created it/first brought it up, and if you can make out a landmark on your map near your home, even better. Go out and find a cave or something. If you've set 'generate structures' to on, then you have a chance to find npc villages, abandoned mineshafts, strongholdes, etc. Go sack a dungeon and steal some loot.
You'll really only get as much out of it as you put into it. At my base, i have a skeleton spawner trap, unlimited arrows, unlimited bones, a cow farm, endless wheat, endless steak and leather, endless spaplings, endless wood, endless charcoal, 512 ingots of iron, plenty of gold, and an abandoned mineshaft underneath my base; so, tons of string and chests of loot. I could work myself into a routine that has me constantly harvesting these, and that could be considered 'done'.
But i built a map cause it took me eleven kilometers of sailing in one direction to find this small island that i finally dug myself into simply because i was tired, it had the first vein of coal i could find, and i was sick of eating raw meat.
Then i got bold and started moving around. I couldn't get lost anymore now that i had a map. I seemed to be in a world populated entirely by unappealing jagged mountainous islands, and ocean. Vast, vast ocean. I was lucky that i'd set up shop on a reasonably sized landmass. Then i asked myself, 'alright, so what's on the outermost edge of my map?'. So, i went and mapped out my entire map. I foudn wolves that i'm in the process of taming, i found another abandoned mineshaft, which i suspect is connected to the one under my base, i found a cave rich in iron. I built a small secondary base/shack near those locations, so i could regroup after a particularly exhausting/dangerous adventure. I sacked two cave spider spawners, a zombie spawner, and now i feel like i can take on the world!
Set little goals for yourself. Now that you've got your home/base, look around. Are there any neat caves you found? If so, well what's down there? Let your curiosity take you places in the world. Try figuring out unique ways of conserving your resources. I don't much care for using up my iron needlessly, so i'll only make iron swords. I'm perfectly content with leather armor. I have an endless supply on account of my cow farm. I take regular enough damage that i need to swap it out fairly frequently, but it isn't a problem for me. I have endless food too, so i'm not worried about taking damage. Make your life easier now that you've got your home. Lure some cattle into a fenced in area, and start harvesting them. Make a bow and arrow, hunt some baddies, take on an Enderman!
And this is just the vanilla experience. There are countless mods that go even further.
It's up to you how rich you want your experience to take you. -
