I think this would be a really helpful and handy feature to have. I often have to manually back up my worlds for fear of my city being corrupted.
I would also think it'd be helpful if you could also have a button that appears when you pause and it's a 'create backup' option. This would be helpful when for example you have finally finished building a intricate redstone contraption and want to save a copy in case the test of it fails and blows up, or before you are doing a heavy operation on SPC or something.
As for the weakness to do-overs...screw the cheaters. I don't see why this is an issue, because if you really wanted to cheat in survival mode, you can do it, but just ruin the game for yourself. If you're going to do-over to before you died all the time, why not just walk around in creative mode, or give yourself free diamonds? It's is EASY AS HELL to cheat in Minecraft, it's just that it ruins survival mode for you. So, no ****s given about cheaters, hence no special saved worlds in different formats.
I think the reason it hasn't been done is because people are used to ladders and signs having air in them, and changing the appearance to water, while leaving the coding as air, would be confusing.
Also, there's issues with flowing water, and the game would have to decide how deep of water to render, since flowing water doesn't take up the whole block either. If the game simply rendered underwater signs and ladders as being full of water, then they would look strange in the middle of a stream, where you'd have the opposite problem from the one in the OP, you'd have a gravity-defying lump of water inside your fence block, while water flowed around it at a lower level.
The only way to really change it would be to make water flow through transparent blocks, which would break a lot of things that people like to make in Minecraft.

No. There is no half air block where half slabs are involved. Air is not a block. Air is never a block. Air is the absence of a block, and is always treated as such. Where you place a slab, there is only the slab, which occupies a block space. The other half of that space cannot be filled by anything except for an object with the same ID.
So it is impossible. There is be no conceivable method of implementation.

Don't you just hate it when you are building a nicer slope from the ground into your pool and you use slabs but then, your slabs don't occupy a full block and ugly air pockets are formed in your pool! -insert sadface here-
That is one of the biggest limits of building underwater. You HAVE to use full blocks on the exterior. This makes for UGLY shipwrecks (hint hint mojang ocean content) and UGLY pools and UGLY underwater resorts etc.
I have been thinking, since it's not possible for water blocks to occupy the same space as another block, why not fake water?
What I'm suggesting is, when you place a slab in water for example, the half slab airpocket will still be there, but instead the game renders the air as water. Hence the slab will LOOK like it's occupying only half a block of water, but it actually is using the whole. This retains functionality (of using LADDERS for breathing pockets for example) while allowing for nicer underwater structures!
PS: The fake water space can apply to any blocks which are not rendered a full block such as chests or hoppers. The fake water will still act like air. It will just look like water. (meaning no resistance on the fake water)
Problem is, I'm not a programmer, and one could possible foresee difficulties with implementing this - if it's actually possible or not. What do you think?
Also, what if say you had a giant tank of water, and there was a hole in it (grr endermen) and you had to patch it up quickly with a slab? Since the slab only LOOKS like there's water through it, but actually doesn't allow water to pass through, water will not leak out.
I think it's a pretty good idea, but wouldn't the dragon no longer have the ender crystals to heal from and therefore making it much weaker? And can it be summoned in the Overworld or only the End?
Actually BUD switches can no longer do this after the update. BUDs can still detect the placing and remove of a block, but can no longer detect changes in the state of the block such as closed/open door, stage of wheat/other crop, and also opening and closing of fence gates.
Since you're in creative mode there really is no reason to build a slow ass piston controlled laggy and not to mention huge elevator. Just use command blocks, man. And make some pulsing pistons attached to fake elevator sounds!
Depends. if you just want a wall for design and don't care if people to get over just use iron bars or glass panes.
If you want to restrict them climbing over, use slabs on top of iron bars/glass panes and replace a block of panes/bar with a solid one block version of the slab say every 5 bars. Or just a straight up wall.
If you want them not to see the other side, leaves.
