I have tried re recording it with the start and ending points at opposite angles of each other and I get the same spinning bug. Could this also be a bug due to the extra long distance involved?

To confirm, this is using the latest available version of the mod, with clean reinstall, the camera path had only two points, in the same axis, the entire route is ~11,500 blocks long and camera was pointing the same direction at the beginning and the end. it was recorded over 20 minutes (shrunk down in post-editing)
I gave up trying to film it how I wanted it to look after at least 40 attempts, ended up looking alright but would prefer to not have a spinning camera.
I would suggest to keep looking into that spinning camera bug, 19/20 videos i attempt start spinning the camera slowly. Even when its only 2 or 3 camera points making a straight line. I haven't figured out how the lucky 20th video actually works out. I have tried re-downloading to the latest one and yes, ive been using the v1.2.

When im not writing game guides for my job or minecraft, im around the city studying local ancient architecture. Hence why im doing Project 1845 and this texture pack.
Edit: The "palace red" is more like a "fresh palace red" at the moment and I'm still trying to take photos of an appropriate "faded authentic palace red" to use instead, but finding the right tint of red is a tad difficult since they get suspicious when someone takes macro close ups of palace walls with a big professional camera
